Ingredients of Crispy Chicken

  • 270 gm chicken
  • 1 tablespoon garlic salt
  • 1 tablespoon paprika powder
  • black pepper as required
  • water as required
  • 1 1/2 cup all purpose flour
  • 2 egg
  • salt as required
  • 2 cup refined oil

Step 1 Coat the chicken with egg and flour

The coating needs to be done with separate ingredients, dedicate one hand to dry coating and one to wet for a lesser mess. To begin, add flour to a deep-bottomed large dish and season it with garlic salt, paprika and black pepper and some regular salt. In a different dish, beat the eggs and add the water to it. Take the washed and dried chicken pieces and dip each piece in the egg mix once and then coat with flour. Repeat this process with each piece and keep them aside.

Step 2 Fry and serve!

Heat oil in a pan and insert a wooden spoon to check if you do not have a thermometer. If you see lazy bubbles, start adding the chicken and do not move it as soon as you put it into the oil. Let it sit for about 2 minutes. This helps the crumbs stay in place, resulting in a flaky coating. Now move the chicken, take out when a rich golden colour is achieved and serve with your favourite sauce!

Cheese Stuffed Capsicum

Ingredients of Cheese Stuffed Capsicum

  • 2 washed & dried red bell pepper
  • 230 gm crushed paneer
  • 1 teaspoon roasted cumin powder
  • 1/4 cup peas
  • 1/2 cup grated low fat mozzarella cheese
  • 3/4 teaspoon pav bhaji masala
  • 1/4 teaspoon garam masala powder
  • gm salt
  • 2 washed & dried yellow bell pepper
  • 2 medium chopped onion
  • 3 medium boiled,mashed,peeled potato
  • 1/4 teaspoon sugar
  • 1/2 tablespoon vegetable oil
  • 1 teaspoon kashmiri red chilli
  • 2 chopped green chillies
  • 1 teaspoon powdered black pepper

Step 1

Prepare the bell peppers First, preheat the oven to 200C. Then Slice off the uppermost part of the bell peppers and de-seed them. Now, Brush them with oil and keep them aside for a while.

Step 2

Make the masala On a pan, heat some oil, add onions and saute them until they turn translucent. Then add potatoes, paneer, peas, Kashmiri mirch, garam masala, black pepper, salt, sugar, pav bhaji masala, green chillies and roasted cumin powder. Mix them well and then stir fry for 5-7 mins on medium flame to get a dry mixture.

Step 3

Stuff the bell peppers Once done, turn off the gas flame and stuff the bell peppers with this filling. Sprinkle mozzarella cheese on the top of this filling.

Step 4

Bake the bell peppers Grease a baking tray with oil and then place the stuffed bell peppers. Bake them for about 18-20 mins. Check if the outer skin of the bell peppers has turned wrinkled.

Step 5

Kung Pao Paneer

Kung Pao Paneer is an Indo-Chinese recipe. If you’re a paneer fan, then you’re surely going to love this combo. Kung Pao Paneer has a blend of Indian spices and Chinese flavors. Unlike, Chili Chicken, it doesn’t have too much soy sauce in it rather the flavor comes from the Indian spices added to it. The other twist to the recipe is adding crushed peanuts. Ingredients of Kung Pao Paneer

  • 250 gm chopped into cubes paneer
  • 1 1/2 tablespoon corn flour
  • 2 dry red chili
  • 1 medium chopped capsicum (green pepper)
  • 1 handful chopped spring onions
  • 1/4 cup crushed peanuts
  • gm salt
  • water as required
  • 1 1/2 tablespoon red chilli sauce
  • 2 tablespoon vegetable oil
  • 1 1/2 teaspoon chopped garlic
  • 1 medium thinly sliced onion
  • 1/2 tablespoon soy sauce
  • 1 teaspoon red chilli powder
  • gm black pepper

Step 1

Coat the paneer with masala In a bowl, add paneer cubes along with chili powder, salt, pepper, and 1 tbsp cornflour. Mix everything well.

Step 2

Shallow fry paneer cubes Heat oil in a pan and then add paneer cubes. Shallow fry them till they turn golden brown in color. Once done, transfer them to an absorbent paper. Now, saute garlic on the same pan.

Step 3

Combine the rest ingredients Now, add onions and red chillies. Saute them until the onions turn translucent. Next, add capsicum. and saute it for 2 mins. Once done, add chili sauce, peanuts, soy sauce, and 1 tbsp cornflour (mix 1/2 tablespoon of cornflour in 1 tablespoon of water). Mix to combine everything well. Cook for 3 mins.

Step 4

Add the fried paneer cubes Finally, add fried paneer cubes along with salt. Mix everything well and cook for about 1-2 mins.
